Poké Bowl Inspiration – The Ancient Bowl

The ancient grain red quinoa is a nutty flavoured, yet light base for a poké bowl. Pumpkin seeds and quickly roasted cauliflower add a nice crunchy texture.

Ingredients (for 1 serving)

Amounts can be adjusted to your liking and can be increased to serve more people

Method

  1. Toss 80g of diced Mt Cook Alpine Salmon with 1 tablespoon of the Mt Cook Alpine Salmon Poke sauce
  2. Sprinkle with roasted pumpkin seeds, dill & chilli flakes
  3. Serve on a bed of roasted cauliflower, red quinoa and shaved cabbage
