Poké Bowl Inspiration – Congee(ish) Bowl
Black glutenous rice and coconut milk bring a creamy congee feel to this substantial poké bowl.
Ingredients (for 1 serving)
Amounts can be adjusted to your liking and can be increased to serve more people

- Mt Cook Alpine Salmon (approx 80g for 1 person)
- 1 Tablespoon Mt Cook Alpine Salmon Poké Sauce
- Chopped Chilli
- Coriander leaves
- Diced roast kumara
- Coconut cream
- Cooked black glutenous rice
Method
- Toss 80g of diced Mt Cook Alpine Salmon with chopped chilli, coriander leaves, diced roast kumara and 1 tablespoon of the Mt Cook Alpine Salmon Poké
- Serve on a bed of black glutenous rice and drizzle with coconut cream
