A New Season of Caviar Starts June 2026

June marks the start of Mt Cook Alpine Salmon’s caviar season.

For a short and special window, the prized salmon pearls will once again appear on the menus of selected restaurants and luxury lodges across New Zealand.

A new flavour added to the range

This year, we’re introducing something new: Pink Gin-infused salmon caviar, joining the signature Malossol and Ikura caviar.

Delicately cured with Humdinger Gin’s Pink Gin from Geraldine, this limited release brings together the natural pop of Mt Cook Alpine Salmon caviar with bright berry aromatics and a refreshing lift of Rangpur lime. Crafted with locally grown blackcurrants and raspberries, the gin adds a playful South Island twist to a truly luxurious ingredient. The result is a modern take on salmon caviar: elegant, vibrant and just a little unexpected.

It also celebrates two distinctly New Zealand producers, united by local ingredients, craftsmanship and a shared love of flavour.
