Poké Bowl – Mt Cook Alpine Salmon Style
Make it our way using Freshwater King Salmon from New Zealand's Southern Alps.

Ingredients

- 190g Mt Cook Alpine Salmon, dices into approximately 1.5cm cubes
- 2 cups of your favourite cooked rice
- 1/2 cup cooked edamame beans
- 1/2 telegraph cucumber, sliced
- 1/2 medium carrot, sliced
- 1/2 an avocado, sliced or diced
- 2 tsp pickled ginger
- Toasted sesame seeds
- 2 tbsp Mt Cook Alpine Salmon Poké Sauce (or to taste)
- 3-4 radishes, sliced
- 2 tbsp rice vinegar
- Pinch of salt
Method
- To make the pickled radish, place the sliced radishes in a bowl, mix in the rice vinegar with a pinch of salt and leave for 5 minutes
- In a bowl, combine the Salmon with the Poké Sauce
- Place the rice in 2 serving bowls and arrange the vegetables on top
- Add the salmon and pickled ginger
- Sprinkle with toasted sesame seeds and serve

boiled egg / bean sprouts / tofu / cherry tomatoes / chilli flakes / pumpkin and sunflower seeds / sliced capsicum / spring onion / red onion / fresh pineapple, pear or apple / fresh herbs / wakame / wasabi paste
