Nyonya Salmon Salad

The term Nyonya means married woman in Indonesian and also refers to “mother style” cooking of the Straits Chinese or Peranakan people.

Spice trading has attracted many cultures to the Malaccan region of the Malaysian peninsula, resulting in a quintessential sweet, salty, sour and spicy Southeast Asia cuisine. Mt Cook Alpine Salmon’s rich oils are beautifully balanced by the acids and spices of this dish.

Ingredients

350gms, one inch diced Mt Cook Alpine Salmon
1 dessert spoon cooking oil
1 telegraph cucumber (skin-on, diced into one inch cubes)
1 fresh pineapple (skinned, cored & diced into one inch cubes)
1 tablespoon fried shallots
One generous pinch of bonito flakes

Dressing

3 red chillies
1 tablespoon shrimp paste
2 tablespoons fresh lime juice
2 Kaffir lime leaves
1 tablespoon coconut vinegar
1 teaspoon soy sauce
1 level teaspoon salt

Method

1. Blend or pound the dressing ingredients together until smooth
2. Season and sauté the salmon in a hot oiled pan until just cooked
3. Combine the salmon with the cucumber, pineapple and dressing
4. Divide into four bowls
5. Garnish with the fried shallots and bonito flakes

Note: Coconut vinegar can be substituted with an equal amount of fresh lime juice
