Poké Bowl Inspiration – Congee(ish) Bowl

Black glutenous rice and coconut milk bring a creamy congee feel to this substantial poké bowl.

Ingredients (for 1 serving)

Amounts can be adjusted to your liking and can be increased to serve more people

Method

  1. Toss 80g of diced Mt Cook Alpine Salmon with chopped chilli, coriander leaves, diced roast kumara and 1 tablespoon of the Mt Cook Alpine Salmon Poké
  2. Serve on a bed of black glutenous rice and drizzle with coconut cream
