Aoraki Cold Smoked Salmon Okonomiyaki Style
Okonomiyaki come in several variations depending on the region of Japan. Okonomi roughly means ‘whatever you want' and most versions live up to that!
The Tokyo rendition is small and could be considered a single serve, a perfect accompaniment to smoked salmon and crème fraîche.
Servings: 4 snacks or appetisers
Ingredients
150 – 200gms Aoraki Smokehouse cold smoked salmon
100 ml cream fraiche
Red currants
1 cup standard flour
a pinch of baking powder
2 eggs
¾ cup dashi stock
4 cups of a combination of shredded cabbage, green onion, carrot, etc
Method
1) Whisk the eggs then add the stock, flour/baking powder and beat to a smooth batter
2) Add the vegetables
3) Divide into four and make into pancakes on a hot griddle
4) Cover with smoked salmon, crème fraîche and red currents
